The Herdade das Cortiçadas is located near Évora, perched on the highest point of a plain, overlooking a vast cork forest. Pre-historic monuments abound nearby, such as the cromlech and menhirs of Almedres and Anta do Pinheiro do Campo and the rock-art site of Gruta do Escoural. The rich history of the area is further marked by the ancient chapels of São Sebastião da Giesteira and Boa Fé. Likewise, the tradition and the art of making wine have surrounded this land from time immemorial.
The winery combines both old and new elements. Whilst it maintains its original wooden roof structure and lagares (low stone tanks), it has recently been optimised by the introduction of temperature-controlled stainless steel vats. Indeed, the winery allies modern technology with traditional techniques and equipments, such as hand-operated presses. Other parts of the winery have been given new uses. This is the case of the concrete tanks, which now host the estate´s lab.
Red wines are fermented in lagares at a controlled-temperature of 25ºC – 29ºC, and matured in Portuguese and French oak vats. White wines are fermented in stainless steel vats at low temperatures (15ºC). Following quality control, the wines are selected and accordingly bottled as Cortiçadas, Monte das Cortiçadas, Porta D Aviz (a PGI wine) and Dyonisius (a PDO wine).
The grape varieties planted are Periquita, Trincadeira and Aragonez for red wines, and Roupeiro and Fernão Pires for whites.
