Climate: Mediterranean with high temperature amplitude.
Vineyards Location: Borba - Alentejo.
Vineards Age: 33 years old dry vineyards.
Soil: Transition between Marble and Schists.
Grape Variety: Rabo de Ovelha.
Non problematic fitosanity year with homogeneous maturation up to heat stroke leading most vintages. Harvest was later to adjust the characteristics of the fruit with consistent, and conscious, loss of production. Manual picking in 12kg boxes transported to the cellar in a cold room. 4700 kg/ha production.
In the Winery: Entry of cold clusters for sorting table, not destemmed or crushed passed directly to the press followed by long low pressing in inerted environment, natural decantation with cold shock. Fermentation occurred in stainless steel tank at controlled temperature between 12 ° C and 14 ° C for 35 days. After fermentation remained one month and half in battonage.

Winemaker's note: An irresistible challenge. When you want to work a single variety that gave so much to Alentejo´s whites and appears as almost ostracized from the public lights, the level of expectation is high. Also the surprise to see that with well done viticulture and when the enology grows, the concept of field varieties may result, at least, in challenging wines.
