Certified Organic Vineyard. At 500m distance, the dam of Montargil as a great influence in the microclimate, increasing humidity and lowering the temperatures.
Style
ENSAIO means test or trial. With this wines we pretend to show the best of our terroir and our grape varieties, testing them in different winemaking technics and different aproches.
Winemaking
The clusters were hand-harvested and carefullysorted at the winery. Gentle all bunch pressing. Wild fermentation took place in used french oak barrels with controlled temperature. The wine aged for7 months in barrel with bâtonnage.
Flavour / Profile
Pale color, creamy mouthfeel and great acidity. The aroma has fresh red fruits, floral hints and discrete barrel notes.

Fish, seafood, sushi, vegetarian dishes, cold salads, pasta and pizza.
