Certified Organic Vineyard. At 500m distance, the dam of Montargil as a great influence in the microclimate, increasing humidity and lowering the temperatures.
Style
ENSAIO means test or trial. With this wines we pretend to show the best of our terroir and our grape varieties, testing them in different winemaking technics and different aproches.
Winemaking
The clusters were hand-harvested and carefullysorted atthe winery. Whole bunch gentle pressing to obtain a blanc de noir. Sparkling winemaking using the Traditional method with free yeasts. The bottles were leftto rest for 12 months.
Flavour / Profile
The aroma has fresh citrus and white fruits, together with some fresh baked bread. Light and crisp on the palate with a refreshing finish.

Fish, seafood, sushi, vegetarian dishes, cold salads, ceviche and fish tartars.
