Gáudio Licoroso, a fortified wine made from the Antão Vaz grapes grown on plot no. 3.1.6. whose location is particularly suitable for a special fungus called Botrytes Cinera. After the harvest, the grapes are dried via passerillage, an ancient process for concentrating the sugar and aromatic compounds of the fruit. The grapes are then destemmed and pressed. After 24 hours at a temperature of 8ºC the must is transferred to French oak barrels. As the natural yeast contained in the grapes starts to ferment, the temperature of the must increases, bringing out its full potential. The density and sugar contents are strictly controlled until the intended balance is achieved. Fermentation is then terminated by adding grape spirit that has also aged in our French oak barrels. The wine is then left in the cask to age for a year, resulting in this truly unforgettable nectar.
