LET ME BREATHE!
Millennial is a young wine, from young vines. He must breathe before drinking. Release all his rebellion that is indomitable in the bottle.
LET YOURSELF BE SURPRISED!
Produced from a young 5-year-old vineyard, located near the ruins of S. Cucufate, in Vila de Frades. Its terroir is characteristic of this region, with sandy loam soils based on granite. The plants in this vineyard come from stems of centenaries vines, thus trying to preserve the genomes of the region’s native grape varieties. It’s a young, balanced wine, with good acidity, freshness and some fruit.
Soil
Sandy loam soil based on granite.
Harvesting Method
Manual.
Vineyard Age
5 years old.
Fermentation / Ageing Process
The blend was made directly after harvest and fermentation is spontaneous. The wine fermented in Talha and remained until the end of December and beginning of January. It was cleaned, filtered naturally through the masses and placed in another Talha where it aged for 5 months. After bottling, the wine aged in the bottle for 4 years. No chemicals were added throughout the process, except a small amount of sulfur ate the end (on average ¼ of that allowed for organic wines).
Service and Drinking Temperature
Serve at a temperature between 9ºC e 12ºC. You can serve directly, but we recommend letting the wine breathe for around 10/20 minutes before serving.
