Vinification: Hand-picked grapes are unloaded and immediately destemmed and crushed. In the cellar, extracting enzymes are added, while the must is cooled to a temperature of 10ºC (50ºF). After this period, they are pressed, with the must drawn off and filtered for decanting. The must temperature is then kept at 14ºC, yeast is added, and the fermentation process begins.
Aging: Once the fermentation phase is finished, the wine is transferred in order to initiate the stabilization and clarification process.
Tasting notes
Color: Wine with citrus color.
Aroma: Tropical fruit aroma with citrus notes integrated with pleasant herbaceous notes.
Palate: Intense and elegant in a harmonious and fresh set.
Consumption: It can be drunk now or stored for 2 years after bottling, as long as the storage conditions are suitable.
Gastronomy: This wine is a fine accompaniment to salads, seafood, fish dishes and white meats.
