Olaria White

Year: 2018
Designation: Regional Alentejano
Grape Varieties: Síria (60%) - Antão Vaz (25%) - Arinto (15%)

Vinification: Grapes are unloaded at our cellar and immediately destemmed, crushed and cooled. They settle for eight hours in order to extract greater aroma from the skins. After this period, they are pressed, with the must drawn off and clarified through decanting. The must’s temperature is then kept at 15ºC (59ºF) during fermentation.
Ageing: Once the fermentation phase is finished, the wine is immediately transferred in order to initiate the stabilization and clarification process.
