Vinification: After 2 days of soaking in preferment to enrich aroma: fermentations ran for 6 days to 24ºC, with a delestage per day for the extraction of color and volume in the mouth.
Ageing: The wine after malo-lactic fermentation aged 12 months in barrels.
Alcohol content: 14,50%
Total acidity: 5.8 g/l
pH: 3.64
Reducing sugars: 0.5 g/l
Tasting Notes:
Colour: Dark red.
Aroma: Ripe fruits like the black plum, blackberries, black pepper, spices and cocoa.
Taste: Black fruits perfectly married with cocoa and with the elegance of franch oak, round tannins, with good structure on the mouth.
The finish has nice notes, is full bodied, elegant and very persistent.
Longevity: Aging potential of 10 years stored in good conditions.
Foiod Matching: Goes well with red meats or furred game.
