Winemaking
The grapes, carefully selected from specific plots, are harvested at their optimal ripeness to ensure ideal acidity and freshness. They are then meticulously handpicked and transported to the winery in 1000 kg bins. Upon arrival, the grapes undergo rigorous inspection on a sorting table, followed by de-stemming and gentle crushing. The juice is extracted through a delicate pressing process and transferred to stainless steel tanks, where it is kept at 8ºC for 48 hours to allow for decanting. Fermentation occurs in temperature-controlled stainless-steel tanks at 14ºC over a period of 30 days.
Aging
100% of the blend is matured in stainless steel vats with occasional lees stirring, remaining on the fine lees for 6 months.
Tasting Notes
Produced with the finest selection of grapes from our own vineyard at Herdade dos Toucinhos, this wine boasts excellent aromatic concentration. It has a pink blush color with violet hues and a crystalline appearance. The aroma is expressive and complex, featuring fresh red and tropical fruits notes complemented by elegant floral. On the palate, it is very fresh, with a pleasant balance and persistence. Subtle mineral notes add a distinctive character, reflecting the essence of our vineyard.
Extremely versatile, this wine pairs well with appetizers, and its elegance makes it suitable for all types of fish, seafood, and white meats, whether in light or more elaborate dishes.
Best served directly from the original bottle. Recommended serving temperature: 10ºC. Consume within 24 hours of opening.
