Winemaking
The grapes were carefully handpicked in 22 kg crates and subjected to a rigorous sorting-table process upon arrival at the winery. After complete de-stemming and gentle crushing, the must was transferred to pre-fermentation maceration tanks, allowing for greater aroma and flavor extraction before pressing. Alcoholic fermentation took place in stainless steel vats at a controlled temperature of 14°C, preserving the freshness of the fruit and allowing for a vibrant expression of the aromatic profile. Following alcoholic fermentation, the wine underwent partial malolactic fermentation, imparting a smoother, rounder texture, enhancing complexity, and softening the flavor profile.
Aging
100% in French oak barrels for 12 months, enhancing the wine's complexity with notes of vanilla and spices.
Tasting Notes
Produced from a meticulous selection of grapes from our vineyards at Herdade dos Toucinhos, this wine displays remarkable aromatic concentration. It presents a pale golden hue, with a fresh, inviting profile that combines subtle buttery notes with hints of ripe peach, apricot, and delicate undertones. On the taste, the wine reveals crisp, zesty flavors, balanced by a light, steely texture and smooth, well-defined structure. The clean, refreshing acidity leads to a long, elegant finish.
Extremely versatile, this wine's elegance makes it an ideal pairing for a wide variety of dishes, including all types of fish, seafood, and meat, whether in light or more elaborate preparations.
