Senhor Doutor d’Évoramonte Red


: Mediterranean with hot, dry days and cool nights.
Soils: The vineyards are grown on poor soils of schist origin, leading to very concentrated grapes. The aromatic intensity is further intensified by cultural practices in the vineyard of opening the canopy through shoot thinning and reducing the yield with bunch thinning.

Grape Variety: Touriga Nacional (100%).
Denomination: Vinho Regional Alentejo.
Vinification: Very selective manual harvest in 20kg boxes. All grapes are inspected on a sorting table before crushing and conveyed without pumps to the vat. Wild yeast fermentation. Post fermentation maceration of over 20 days.
Ageing: Aged for 12 months in French and American oak.

Alcohol: 13.5% Vol
Production: 1.500 bottles of 0.75l released in February 2012.
Service: Serve at 16 º C to be enjoyed at 18° C.
Gastronomy: Superbly accompanies fully flavoured Mediterranean dishes, red meats, game and powerful cheeses.



Tasting notes

Aroma: This single vine variety Touriga Nacional surprises us with aromas of violets, bergamot and black fruit jam.
Palate: In the mouth we find floral aromas, concentrated, with perfectly integrated wood, finishing with lots of freshness and elegance.
