Yield: Approx 4-6 tons/ha
Vinification: The 2011 growing season was characterized by mild temperature growing season and fine warm weather during the harvest. The grapes were picked in excel-lent condition, with good sugar and acid balance. The established HF varieties of Syrah, Aragonez, TN and AB were picked and vinified separately , for add-ed complexity in the final blend. Ageing in used French and American oak barrels for 9 months. Bottling in April 2013. The wine, for release in 2015, is showing fresh and attractive aromas of plums, cherries and black cur-rants. The palate is smooth, elegant and supple, with great balance and a firm supportive tannic structure. Drinking well now but will improve another 3-5 years ageing.
Crushing: Destalked prior to gentle crushing.
Tanks: Small 15ton fermenters with regular pump-overs and delastage.
Temperature: 24°C to 27°C
Ageing: 9 months in used French and American oak barrels.
Finishing: No fining or cold stabilisation. Blended and bottled in April 2013.
Alcohol: 14%
Total acidity: (7.0g/l)
Volatile acidity: 0.52 (g/l)
Colour: Deep, dark red colour, almost opaque.
Aroma: Fresh and attractive aromas of plums, cherries and black currants.
Palate: The palate is smooth, elegant and supple, with great balance and a firm supportive tannic structure.
