Vinification: The grapes coming from the manual harvest of our associates are discharged and immediately destemed and crushed. After 48 hours of maceration at low temperature, the fermentation begins controlled temperature (23-26ºC) and lasts for 15 days using pumping mixed with a few delestages.
Ageing: Aged in second use french oak barrels for 9 months. After bottling the wine rests in bottle from 3 to 6 months.
Tasting notes
Color: This wine has a dark garnet color.
Aroma: Aromas of ripe black fruit and some floral notes of coffee and chocolate
Palate: In the mouth is powerful, fresh with firm tannins and a long finish.
Consumption: Consume immediately or during the next 5 to 7 years. It should be consumed at a temperature of 16ºC – 18ºC.
Gastronomy: It accompanies well red meat dishes, game, pates and cured cheese.
